Homemade Spicy Potato Chips


This blogger woke up early this morning thinking about my healthy potato chips and I had to share my recipe with our followers. Growing up in the south has its benefits being that we southerners will always find a way to incorporate our spin on a regular recipe.




Being a lover of the classic potato chip, I had to find a healthier way of eating them without the burden of adding calories and fat to my menu.

Ingredients:
2 1/2 cups of canola or olive oil
1 lb of clean potatoes
1 teaspoon fresh rosemary
Sea salt
Freshly ground pepper
Red Pepper Flakes
Cilantro

Instructions:
Heat oil to 325 degrees in a large pan/cast iron skillet.
Slice potatoes into paper-thin slices with required equipment such as a Food processor
Fry potatoes for 2.5 mins in properly heated oil.
Do not over crowd pan.
Transfer to required plate to drain correctly and sprinkle with Cilantro, red pepper flakes, rosemary, salt and pepper to your desired taste.
