LIRM Recipe Spot ~ Sliced and Diced Collard Greens - SPICY!!!!


I woke this morning going against my usual breakfast fanfare and as hard as I tried, I could not beat the urges coming my way. The thought of something I usually don't partake in has not overtaken me in quite awhile.

As I lay in bed, my mind began to be filled with the wonderful desire to partake in some good right southern food and I had to be obedient. As my size 13 feet struck the carpet, I brushed my choppers and out the door I went to the nearest supermarket.  This dish was the best thing I had prepared in a long time and I must confess, I am quite proud of myself.

Check out this quick and easy recipe for Sliced and Diced Sauteed Collards and I guarantee you that you will thank me later.

Ingredients:
12 oz batch of  chopped Collard greens
1 tablespoon of Light Olive Oil
Red Pepper Flakes
Garlic sliced and diced
Half of Onion sliced and diced
Light Salt

Instructions:
Wash Collard Greens thoroughly.  In a large saute pan add olive oil, Red Pepper Flakes,  sliced Garlic, onions and saute. Add Collards and toss until desired.

Go Light on the Salt!!!
