Loveable Veggie Kabobs


The recipe of the day is one that is simply healthy and to the point. I have been thinking of leaning more towards the vegetarian side of eating these days due to the way it taste and looks.

I have tried it in the past and it gives you a great feeling to know that you are putting healthy ingredients in your body and it makes you feel amazing.

How about trying out these Loveable Veggie Kabobs to kiss your food palate.

Ingredients:
8 (8-inch) wooden skewers
4 medium orange, red, and/or yellow peppers
2 medium sweet onions
2 tablespoon(s) olive oil
1/2 teaspoon(s) salt
1/4 teaspoon(s) coarsely ground black pepper

Directions:
Soak wooden skewers in hot water at least 30 minutes. Prepare outdoor grill for covered, direct grilling on medium.

Cut peppers into 1-inch pieces. Cut onions into 8 wedges each, then cut each wedge crosswise in half. Alternately thread peppers and onions onto skewers; place in jelly-roll pan.
 
Brush vegetables with olive oil, and sprinkle with salt and pepper. Place on hot grill grate. Cover grill and cook vegetables 8 to 9 minutes or until vegetables are lightly charred and tender, turning occasionally
