Rosie's Turkey Surprise
Check out this hearty and healthy recipe that we call "Rosie's Turkey Surprise" and see if you can ignore it and not try and make it.
Ingredients:
1 6lb bone-in turkey breast
1 1/2 teaspoon dried rosemary, crumbled
1 teaspoon salt
3/4 teaspoon coarsely ground black pepper
1 cup chicken broth
Directions:
Preheat oven to 350 degrees F. In cup, combine rosemary, salt, and pepper. Rub rosemary mixture on both inside and outside of freshly prepared turkey breast.
Place turkey, skin side up, on rack in small roasting pan. Roast turkey 1 hour 30 minutes. Occasionally bast turkey with pan drippings, 45 to 60 minutes longer. Turkey breast is done when temperature on meat thermometer inserted into thickest part of breast (not touching bone) reaches 170 degrees F and juices run clear.
Transfer turkey to warm platter. Let stand 15 minutes to set juices for easier carving.Remove skin before eating. Makes 10 main-dish servings.
