Recipe of The Day - Baked Tilapia with Fresh Veggies


I must admit that I am always battling to eat something that is deep fried and extremely unhealthy but I have kept it at bay so far. If you are going to be a healthy Legend, Icon or Role Model, you must keep up the daily exercise and healthy eating regimen.

We have found the perfect recipe to keep you in tip top shape as well as satisfy your taste buds. I know that there are many who love fish and many who don't but we are confident that you will love this recipe for Baked Tilapia with a side of love.

Ingredients:
1 1/2 pounds Fresh Tilapia
1 Zucchini
1 Yellow Squash
1 Lemon
Italian seasoning
Salt and Pepper
4 tablespoons Butter
2 cups Cooked Brown Rice

Directions:
1. Divide the Zucchini and Yellow Squash into four portions. Season the vegetables with Italian seasoning.
2. Place the Tilapia on top of the vegetable stack, add a bit of butter, season with salt and pepper and top  with lemon slices or wedges.
3. Place in 350ºF oven for 20 minutes and serve over fresh brown rice.
