This blogger is on the run doing many things today but I wanted to share with our readers a quick, healthy and tasty dish for your appetites. Being that we celebrate healthy eating on a daily basis, we have something that is sure to please.

Ingredients:
1 - 2 Fresh Lemons
1/2 cup of Fresh Parsley Leaves
1 Clove of Garlic
2 Tablespoons of Fresh Grated Parmesan Cheese *Store Bought is Optional*
3 Tablespoons of extra Virgin Olive Oil
Salt/Pepper
Instructions:
Pulse Parsley, Garlic,Parmesan and moderate Lemon Juice in processor until coarsely chopped. Add oil as you slightly speed up processor and you view a desired consistency. Add salt and pepper to taste.
Serve over you desired whole wheat pasta and enjoy!
